There are 8 types of cheese.which fall into categories:
Fresh Cheese ..This category contains ie. Ricotta, cottage, Mascarponi etc
Semi Soft Cheese...Colby, Fontina etc
Soft Ripe Cheese... Brie, Camembert etc
Cooked Cheese...Mozzarella, Provolone etc
Washed RInd Cheese... These are the 'stinky' cheese ie Stinking Bishop etc
Semi Hard Cheese... Includes Cheddar, Red Leicester etc.
Hard Cheese.... Parmesan, Pecorino, Gouda
Blue Cheese... Veined cheeses, St Agur etc
There are over 2,000 known variations of the above but there are many more made on small farms and in peoples kitchens
