What are the benefits of dried food over non-dried food?

Extremely long shelf life with dried food.

Non dried food, rot within days.

In the fall, I dry chopped onions for use when prices get to high, and in many stews and soups that I make during the winter months. More of a concentrated flavor in dried foods.
a longer shelf life, Easier to carry while camping.
1. It stays good for many years

2. Much more compact, you usually only need to add water and boil
Light weight and long shelf life.
