Recipe for a Sauteed Veal Scallops in Wild Mushroom Cream Sauce?

Sauteed Veal Scallops in Wild Mushroom Cream Sauce

For the sauce:

2 tablespoons olive oil

2 tablespoons unsalted butter

1/2 cup minced shallots

1/2 pound wild mushrooms (chanterelles, shiitake, oyster or a combination)

1 teaspoon minced fresh thyme

Salt and freshly ground pepper to taste

1 large garlic clove, minced

1/2 cup dry white wine

1 cup veal demi-glace*

1 cup heavy cream

For the veal:

8 veal scaloppine

Flour for dredging

Salt and freshly ground pepper to taste

2 tablespoons olive oil

2 tablespoons unsalted butter

Fresh lemon juice to taste

Minced fresh chervil to taste

Make the sauce:

In a saute pan set over moderately-high flame, heat the oil and butter until hot. Add the shallots and cook, stirring, 1 minute. Add the mushrooms, thyme and salt and pepper and cook, stirring occasionally, for 3 to 5 minutes, or until mushrooms are softened.

Add the garlic and cook, stirring, 1 minute. Add the wine and reduce by half. Add the demiglace and simmer 5 minutes.

Add the cream and reduce until lightly thickened. Adjust seasoning. Cover with a round of buttered waxed paper and keep hot.

Make the veal:

Dredge scallops in flour, shaking off excess, and season with salt

and pepper.

In large skillet set over moderate heat, heat olive oil and butter until hot. Add scallops and saute for 1 minute on each side.

Transfer to scallops to sauce for just a minute and season mixture with fresh lemon juice and chervil.

Serves 4.

I always order eggs over hard, and about 10% of the time the waitress brings them scrambled or runny. What is the right way to tell the waitress the order is not correct, or should I just ignore it?

What kind of sushi should I order for a friend who

I am taking a friend/co-worker to lunch tomorrow...she is trying sushi for the first time. I am pretty new to it, and I am not sure what to order (my boyfriend introduced it to me, I always get what he orders!!) I love the stuff, but she is hesitant. What would be a good choice to start her off with??

Oh, one important thing. If you mix up a batch of soy and wasabi for dipping, a cut roll gets one bit of a corner dipped in the sauce. The regular sushi--nigirizushi--do not dip the rice in the sauce: turn it over and dip a little of the fish in the sauce.

Dipping the rice into the soy sauce is like ordering a hamburger and slathering ketchup all over the outside of the bun. Besides, the rice will fall apart and make a mess. Messiness is anathema to the zen of sushi. Go to a sushi bar, enjoy, but please do not act like a barbarian. I have little patience for Japanese peoples

Does carryout mean no tip?

What does anyone feel about tiping the carryout person? Dont they have to package all the food and do allot more work then the actual server? Why is it that people seem not to tip these people?
Yes you should tip the take-out person. Besides taking care of their dine-in tables (which can be a chore when the restaurant is busy); I have to take time out to answer the phone, take the order, put it in the computer, bag and cup the free chips and salsa you get with every meal, double check the boxes, label the boxes, and bag up all the boxes. All this has to be done in a pre-determined time and I take care of the money too. The bigger the order, the harder it is. Sometimes I have an easier time waiting a table than putting together a to go order. Plus if I dont give my dine-in customers the attention they deserve I loose my tip there too. So please be curtious people! We do work hard for our tips!
