Can someone help me prepare shrimp fried rice?

SIMPLY SHRIMP FRIED RICE

1-1/2 cups rice, cooked

20-25 small shrimp

1 onion

1 red pepper

1 egg

3/4 cup peas

1 clove garlic, minced

1/4 cup soy sauce

butter or oil

Cook rice as directed, approximately 1-1/2 cups.

In a medium-sized frying pan, saut 1 small chopped onion, 1 red chopped pepper, and 3/4 cup frozen peas in butter or oil. Set aside.

Next, saut 20-25 small shrimp with 1 large clove of garlic in butter or oil. When lightly brown, add vegetable mixture.

After just a couple of minutes, add frying pan mixture to rice pot. Quickly scramble 1 egg and add to pot as well. Add 1/4 cup of soy sauce, using judgement and preference, of course.

Stir, simmer for a few minutes and enjoy

Prep Time: 15 minutes

Cook Time: 10 minutes

Ingredients:

4 ounces frozen uncooked shrimp, unshelled

Marinade:

1 tablespoon oyster sauce, or to taste

1 tablespoon soy sauce, or to taste

1 teaspoon salt, or to taste

Pepper to taste

1 teaspoon cornstarch mixed with 1 1/2 teaspoons water

Other:

4 ounces cooked ham

1 medium onion

2 green onions

2 eggs (more if desired)

1/2 cup peas

4 cups cold cooked rice

4 to 5 tablespoons oil for stir-frying, or as needed

Preparation:

Run the frozen shrimp under warm running water, pat dry with paper towels, shell and devein. Chop into small pieces. Add the marinade ingredients and marinate for 15 minutes.

Dice the ham, onion, and green onion.

Beat the eggs lightly with chopsticks, add a dash of salt, and mix.* Set aside.

Heat the wok and then add 1 tablespoon oil. When oil is ready, pour 1/2 of the egg mixture into the wok and cook over medium heat, turning over once. Cook the other half the same way. Cut the egg into thin strips, and save for later.

Add 2 tablespoons oil, or as needed. When oil is hot, stir-fry the onion and shrimp on high heat for a few moments, remove and set aside. Do the same for the green peas, and then the diced ham.

Add 1 - 2 tablespoons oil, turn the heat down to medium and stir-fry the rice. Add a bit of soy and oyster sauce if desired. Add the other ingredients except the egg and green onion and combine thoroughly. Serve the fried rice with the strips of egg on top and the green onion as garnish.**

*You can also add a bit of oyster sauce if desired

**Alternately, you can mix the green onion and egg in with the other ingredients.

this is how i like to cook fried rice. but i dont like shrimp so i dont know how to cook it.

Cook the rice. Normally. Then in a pan put some oil, a couple of tablespoons. Then add a diced onion. Cook until translucent. Then add the rice. Cook it for a while stirring it ever so often. About maybe 10 minutes. Then throw in some minced garlic. and some peas and carrots. Stir it around for maybe 3 more minutes. Add some butter, about 2 tablespoons. and as much soy sauce as you want, depending on how much rice you used. cook for another 5 minutes or so. stir in your cooked shrimp. and that is how i make fried rice. hey...i never said it would be healthy. but it sure tastes good.

There are two things that are very important, and then you can follow any recipe you like or tweak them around to your liking.

The rice: Cook the rice a day ahead if possible - day old rice seems to work best (plus the rice should be cooled anyway). But before you get to that point, take some rice, such as jasmati, and rinse it off a few times under cold water (with a colander with small holes or even a pot and pour out the water) until the water runs about clear. I usually end up doing about 10 rinses. This will take the starch off the outside of the rice kernel so that your rice doesn't stick together and get all mushy when you cook it.

The cooking method: Stir-fry is meant to be done at a very high heat. Cook at a high temperature (note: you don't want the oil to smoke. It can get hazy, but try to use an oil with a high smoke point, if it smokes, it's burnt and useless) and make sure you have everything with you that you need to prepare it. For example, you may add the shrimp and any veg first, stir fry, then your rice and stir fry it really quickly, and then add your sauce and/or seasonings, until well coated. It shouldn't take that long, but you need to do it quickly. With stir-fry, there's no time to look around for ingredients that you don't have ready.

If you follow those methods, the recipe part will just be trying to figure out what is right for your tastes, but at least you'll be doing it correctly!

Some flavors/sauces/spices that are dominant in this type of cooking are soy, sugar, salt, ginger, garlic, and hot pepper, such as sambal (sambal oelek is popular) or sriracha.

ADDITION!

And the soy does cause the rice to turn brown, although you can also do this with seasonings. My suggestion is to use teriyaki though, i think it makes a more well rounded flavor that isn't too salty. You can do this yourself by adding sugar (brown or white is fine), garlic (fresh, jarred, granulated, powdered...) , and ginger (if desired) to soy sauce. Don't worry about amounts, just add them to your own taste. Hope this helps!
